Perfect on a burger, a sausage sandwich or perhaps something a little fancier such as a caramelised onion and goat cheese tart, the humble onion sure does taste delicious when slow cooked in olive oil, balsamic vinegar and brown sugar.
With an abundance on onions in the pantry and burgers on the menu for lunch, yesterday I whipped up a batch of caramelised onion in my Thermomix.
Feeling lazy I used the Thermomix to chop the onion however if you are wanting longer strands of onion I recommend skip step one and slicing the onion yourself.
4 brown onions
10g olive oil
10g balsamic vinegar
25g brown sugar
1. Cut onion in half, add to bowl and place measuring cup on the lid. Chop speed 4 for 5 seconds. Scrape sides of bowl with spatula and chop again at speed 4 for 5 seconds.
2. Add olive oil, balsamic vinegar, brown sugar and salt and pepper to the bowl.
3. Saute for 25 minutes at 110 degrees, reverse soft speed without the measuring cup.
